This recipe for Italian meatballs has come down through my family and what makes it unique is that the meatballs are fried not baked. Also, by adding bread soaked with milk you are adding moisture to the meat thereby creating juicy meatballs. The moisture is sealed within the meatball by reason of the frying. Oven baked meatballs get dehydrated as a result of the baking process. In a medium frying pan place 2 TBSP olive oil and the garlic over medium heat and cook the garlic but do not let it brown (3-4 minutes). Add the chopped onions and celery cooking until both become translucent. Once finished place all items in a large mixing bowl and set aside. In a small mixing bowl combine the white bread and milk. Pour only enough milk onto the bread to have the bread soak up the milk. Squeeze out any excess milk and place the soaked bread in the large mixing bowl with the onions and celery.
