Think fall celebrations and foods and you can’t help remembering those yummy popcorn balls you enjoyed as a child. Here’s an updated, much easier recipe than the ones mom used to make. Pop a large bag of microwave popcorn. You can use plain or buttered, but other flavors won’t work. Pour into a bowl, but be sure to take out all unpopped kernels. This is a very important step. (you don’t want to bite down on an unpopped kernel) While the popcorn is popping, melt butter in a large saucepan on medium-low heat. Add one half bag of marshmallows and stir till melted. Remove from heat and stir in the vanilla. Pour over the popcorn. Stir the mixture to evenly coat the popcorn. Now, butter your freshly washed hands or spray them with buttery cooking spray. Form balls from the mixture and place them on a cookie sheet lined with parchment paper or waxed paper. Let them set till cool. Enjoy.
