This is a great muffin recipe for breakfast or to serve along with chili and any spicy recipe. I love toasting them in the morning. I have a warm maple cornbread muffin with my orange juice. Nice way to start a day! Ingredients: 1 c. milk 1/4 stick butter 2 tbs maple syrup (the real deal) 1 c. ground cornmeal 1 c. all purpose flour 1/4 c. sugar 1 tbs baking powder dash of sea salt 1 c. frozen corn kernals or dried cranberries (optional) Pre-heat the oven to 375 degrees. Line a 12-cup muffin pan with paper liners – or you can spray your tin with some Pam spray. Whisk together milk, butter, and maple syrup in a meduim sized bowl. In a seperate bowl, whisk together the cornmeal, flour, sugar, baking powder, and sea salt. Stir the wet mixture into the dry mixture. Fold in the corn or cranberries. Divide the batter amoung the prepared muffine cups, and bake in the oven for about 20 minutes or until a toothpick comes out clean from the center of the muffins. Cool for about 5-10 minutes. The
