Should make 7-8 cups of potatoes. Put the broth and potatoes into a stockpot or large saucepan and place over high heat. When the broth comes to a boil, cover and reduce the heat to medium. Cook for about 10 minutes or until the potatoes are tender. Drain the potatoes in a colander placed inside a bowl. Reserve the broth. Mash the potatoes with about 1 cup of the broth, and add more broth, if needed, until the potatoes are mashed to your desired consistency. Add the brown sugar. Salt and pepper the potatoes to taste.
