Low fat chicken vegetable kabobs are the perfect way to mix up a diet. You can serve these kabobs with a pita and tzatziki sauce. To start the low fat chicken vegetable kabobs you will need to soak the bamboo skewers in water over for a few hours. Cut the chicken in to large chunks that are equal in size. place on skewers and drizzle balsamic and olive oil over the top. Use 1/3 rd off your garlic and rub it over the chicken. Season with salt and pepper. Let the chicken marinate for 1 hour. Cut all of the vegetables into large chunks and place them on separate skewers. You will need to do this so that they cook evenly. Drizzle with olive oil, balsamic and the rest of the garlic. Then season with salt and pepper. Also let these marinate for a hour. Grill the chicken and vegetables until they are cooked through but still retain some natural juices. Serve as is or inside a pita with tzatziki sauce.
