How Do You Make Low Carb Chicken Enchiladas?
I live a sugar free/low carb lifestyle. I love to eat and I don’t like feeling deprived of anything. Almost any recipe can be modified to fit my lifestyle. Enchiladas are one of my favorite foods and so I have found a way to make this wonderful mexican dish both low carb and super delish! My family loves it! Cook your chicken. (bake or boil) I boil my chicken breasts. This takes about 30-40 minutes on high boil. Just boil them until they basically fall apart. This makes shredding the chicken super easy and it is always moist! When your chicken is done, shred your chicken using a processor, a knife, or just by pulling it apart after it cools enough. Put your shredded chicken into a bowl and then pour enough enchilada sauce over the chicken to coat it all, and make it very “gooshy.” You don’t want to put so much though that the sauce is standing in the bowl.
