Line a pan with foil, and place skins on the pan. You can slice as close to the skin as possible, and avoid scooping out the excess potato later, if you choose to do so. Bake skin side down in the oven on 400 degrees, until soft. While the potatoes are baking, start cooking your bacon. Once the bacon is done, set aside for later. Remove from oven and scoop out any excess. This step is optional, but it adds a lot of flavor, take a few skins at a time, and quickly fry in the bacon grease just for a few seconds for crispness and flavor. Line skins up on a pan and top with cheddar and bacon (or any toppings you choose) Place in the oven until cheese melts.
