Lemon pie is the ultimate spring dessert! Add this filling to any pie crust, top with whip topping, and you’ll have a tasty dessert for spring! Start by adding the gelatin to the cold water. Stir until dissolved, and add the dash of salt. Stir until very well dissolved. Beat the egg whites in a bowl until stiff. Add 1/2 cup of the sugar. Set aside. Beat the egg yolks in a seperate bowl. Add the rest of the sugar and mix. Pour the eggs yolk and sugar mixture into a pan. Add lemon rind and juice. Cook on low until the mixture is thick. Add gelatin and take mixture off heat to cool. When warm lemon mixture is cooled, fold into the egg whites. After cooling, mixture can be added to your favorite pie crust. Add a bit of whip topping, serve cold, and you’ll have a perfect spring treat!
