If you like homemade dessert, you should try making your own lemon meringue pie. • Mix Sugar, cornstarch and salt. Add a little water, mix until smooth and add remaining water. Cook over moderate heat, stirring constantly with a wire whisk or wooden spoon, until mixture boils. • Lower heat and continue cooking about 1 minute, stirring constantly. • Beat egg yolks. Add a small amount of the hot mixture to the yolks . Blend well and return to sauce pan with the hot mixture. • Cook over low heat until thick, about 2 minutes, stirring constantly. Add butter. Mix well, then cool. • Add lemon rind and juice and mix well. Cover and cool to room temperature. • Preheat oven to 325°. • Make meringue: Beat 3 egg whites with a pinch of salt until foamy. Continue beating and add 6 tablespoons of sugar, one tablespoon at a time. Meringue is ready when mixture stands in stiff peaks. • Spread lemon cream in pie shell. Spoon meringue over it so it touches crust all the way around. • Bake about 15 min.
