Grilling food is fun and easy, and results in a special taste not found from the stove. Making this Lemon Grilled Chicken is even easier, when you marinade the chicken overnight. Here’s how to do it. First prepare the lemon. Use a peeler to remove strips of zest from half the lemon, then trim into fine strips with a sharp knife. Set aside. Grate the other side of the lemon to make 1 Tbsp of fine zest. Finally squeeze the juice from the lemon into a bowl. Using a large bowl, combine the lemon zest and juice, oil, garlic, parsley, thyme, marjoram, salt and pepper. Add the chicken breasts to the bowl, making sure to spoon the marinade over all chicken surfaces, until well coated. Cover and chill for at least 30 minutes, but much more flavorful if done overnight. Preheat the griddle, grill or broiler to medium heat.
