How Do You Make Lemon Cake Mix Cookies?
These are delicious and refreshing lemon cookies. They are so very easy to make and quite the hit at the last function that I attended. My kids loved them too. The recipe uses a basic lemon cake mix and 4 other ingredients that are common around the house. You could really adapt this recipe to any basic cake mix. Confetti cake mix cookies are another favorite in my house. Step 1 Preheat oven to 375 degrees F (190 degrees C). Step 2 Pour cake mix into a large bowl. Stir in the 2 eggs, 1/3 cup oil, and tablespoon of lemon juice until well blended. Drop teaspoonfuls of dough into a bowl of white sugar. I tend to make mine the size of a walnut. Roll them around until they’re lightly covered. Once sugared, put them on an ungreased cookie sheet. Step 3 Bake for 8 to 10 minutes in the preheated oven. The bottoms will be light brown, and the insides chewy.
