Ingredients: Cake – 1 box lemon cake mix (such as Betty Crocker Super Moist) 1 1/3 cup light buttermilk 1/3 cup vegetable oil 1 tsp lemon zest 3 eggs Filling – 1 Jar Blueberry Preserves (Wild Blueberry Maine Preserves if you can find them) Frosting – 4 cups confectioners’ sugar 1/2 cup butter, softened 2 Tbsp fresh lemon juice 1 tsp lemon zest 2 Tbsp milk Decoration – 1 pint blueberries, rinsed (wild blueberries if you can find them, they are half size of regular) Preheat oven to 350 degrees F.
