How Do You Make Kimchi By A Korean Chick?
Don’t buy kimchi (kimchee) in a jar again! Who knows how old that cabbage is! (Although I enjoy the more fermented stuff myself). Kimchee is a simple food enjoyed by the Korean folk and it’s something I’ve had since I could chew (it’s great with spaghetti and Fried Rice for all you GUAM folk). These easy tips were learned from my mom who hails from Chunchon City, South Korea. It’s a healthy side dish for just about anything from fish to steak! Enjoy and Kamsahamnida! First, rinse the cabbage and cut into desired size pieces, usually 2 by 2 inch segments work. Next, add half the cabbage into the bowl and sprinkle salt on that layer. Add the rest and salt it as well. Pack it down tight and cover overnight. Rinse the cabbage thoroughly with water and drain excess water. Add pepper, cabbage, garlic, onion and ginger. Mix thoroughly with gloved hand (recommended).
