Peel and chop a one-inch by one-inch piece of fresh ginger, then dice, chop or slice into small pieces. Put these into your food processor with the metal blade. Add a one-pound bag of cranberries. Add 1/2 cup of sugar (or to taste) and 1/8 teaspoon of finely ground black pepper. Process this in 10-second bursts until very finely chopped. It will take several bursts. Scrape down the sides from time to time to make sure everything gets evenly chopped. When it’s very finely chopped, you’re done! Taste for sugar and pepper and adjust as needed.
