How Do You Make Khichdi?
Khichdi is a South Asian rice dish made from rice & lentils. It’s commonly considered to be India’s comfort food, and was the inspiration for the Anglo-Indian dish of kedgeree. Be it stomach upset or cold or flu, it’s the best diet advised as it’s light & easy to digest. • Wash and clean rice and dal. • Pressure cook rice together with dal, turmeric powder and salt with 3-4 cups of water. • Cook on medium flame. • The khichdi should be mushy. Water should’ve completely evaporated. • Let the cooker cool down completely. • In a pan, add 1 tsp ghee and melt it. • Add jeera and fry a little. • Pour the tadka over the Khichdi and mix well. • To make spice up the curds, add tadka of curry leaves with hing. • Boil potatoes with little salt or microwave them. Serve Khichdi hot.

It is a main dish usually served with yogurt and other sided dishes. The recipe given here serves 1-2. Step 1 Wash the rice and lentils thoroughly and put them together in a rice cooker in 2 cups of water. DO NOT turn on the cooker yet. Step 2 Chop onions and mixed vegetables to small size. Step 3 Saute the onions in the oil (or cooking spray) until they are slightly brown. Step 4 Now add the mixed vegetables, salt and cayenne pepper. Mix well and let it cook on medium heat for 10 minutes (or longer depending on how you like your vegetables). Step 5 Add the sauteed vegetables to the rice and lentils in the rice-cooker and turn on the cooker. Step 6 When the cooker is about halfway done, lift the lid and mix well with a wooden spoon. Step 7 After the cooker is done, let it cool for a half hour and the dish is ready to enjoy!
