Here is a recipe for a pound cake with a Kentucky twist. If your like pineapple and nuts, you will truly enjoy this recipe for Kentucky Pound Cake. Ingredients: 2 1/2 c. sifted self rising flour 2 c. granulated sugar 1 1/2 c. vegetable oil 4 eggs (separated) 1 c. crushed pineapple w/juice 2 T. hot water 2 1/2 T. cinnamon 1 c. chopped pecans Preheat oven to 350 degrees. In a large bowl, combine sifted flour, granulated sugar, vegetable oil, egg yolks, crushed pineapple, hot water and cinnamon. Beat well. Set aside. Beat egg yolks until stiff. Add chopped pecans to cake mixture and mix well. Fold in egg whites. Pour into non-greased tube pan. Bake for one hour. Turn oven off. Leave cake in oven for five minutes longer. Remove from oven and let cool in pan. Turn onto plate and it is ready to serve. Enjoy. Slice before serving.
