It is easy to make simple and nutritious home-made chicken soup. You can freeze it in container and have for stock for lots of recipes. Just add noodles, pasta or rice and you’ll feel better 1-2-3. Fill stock pot with water and set on stove top high heat to bring to boil Rinse chicken with cold water and cut into half and chicken to pot of water (Don’t forget to add the neck)Discard giblets of use in another recipe Add all the cut up carrots, celery and parsnip to pot Bring to boil the turn heat down to simmer (soft boil) You will need to take a spoon and skim the top of the soup every 15 – 20 minutes. Just discard the foam. Simmer on the stove for about 2 hours. The soup should become a pale yellow color (excellent) Remove the chicken pot try to get all the bones. You can add back into the soup chunks of the chicken if you wish Taste for salt and pepper. I like to let people add there own so that I can use the left over stock for other recipes without the added salt.
