How Do You Make Jelly Donut Cupcakes?
• Preheat your oven to 350 degrees F. • Fill a 6-unit cupcake pan with cupcake wrappers. • Mix butter and sugar in a large bowl. Beat with a wooden spoon until creamy. • Add egg, milk, vanilla and lemon zest, and stir until throughly mixed. • Add flour and salt, and stir vigorously until batter is fluffy. • Pour batter into cupcake wrappers. • Bake for 15-20 minutes. • Cool on a wire wrack. • Carefully cut out the center of each cupcake with a small knife. Cut off the top section to make a small cap. • Spoon in about 2 tsp of jelly. • Replace the “cap” on the cupcake. Sprinkle with powdered sugar and serve.
