This wilted spinach salad has the wonderful flavors of sesame seeds and sake. Simple, yet elegant, this dish tastes superb warm or cold. Find out how to make it here. Thoroughly wash the spinach. To do so, fill a large bowl with cold water. Untie the bundle of spinach and immerse it into the water, sloshing it around a lot. Let the spinach float to the top for a half minute. Lift the spinach out and discard the silty water. Repeat the washing process at least three times until the water left has very little silt in the bottom. Tie the spinach together again either with the original tie or with kitchen twine. In a small sauté pan, add the sake and simmer for two minutes, cooking the alcohol off. Add the sugar, soy sauce and vinegar to the sake and set aside. In a mortar and pestle, finely grind the sesame seeds together until they’re consistent. Add half of the sesame seed mixture to the sake sauce and stir. In a medium sauce pan, bring a cup of water and a pinch of salt to a boil. Drop
