Salad is perfect for summer time entertaining. This salad is easy to make and easy to take. All ages will enjoy the fresh flavor and interesting dressing. You can use boneless chicken to keep fat calories low. Iceburg lettuce is typically used, but mixed greens will work just as well. The sesame seeds are optional. Dice cooked chicken. Toss together first 6 ingredients in large mixing bowl using tongs. Cover and keep refrigerated till ready to serve. In small bowl mix dressing ingredients. Cover with lid and shake to mix well. If you prefer more dressing, double the recipe. You can use Bragg’s Organic Raw-Unfiltered Apple cider Vinegar for more health benefit. Use a light corn oil or vegetable oil of your choice. I would not use olive oil in the dressing, nor sugar substitute. The dressing is light and mixes well into the salad. Pour dressing over salad immediately before serving. Sprinkle a small amount of chow mien noodles and green onion on top for garnish.
