Spaghetti squash grows easily in most climates and produce vegetables rich in vitamin A. Once baked or boiled, the interior of the squash separates into spaghetti-like strands. They can replace pasta in many dishes for a hearty, healthy and delicious meal. This casserole is easy to prepare once the squash is cooked and is a fabulous twist on a favorite Italian recipe. Make sure you have about an hour’s time to cook the squash. While the casserole only takes 20-30 minutes, it does take about 45 minutes to an hour to properly cook spaghetti squash. Mangia! Preheat the oven to 350 degrees. Cut the spaghetti squash in half. Scoop out and discard the seeds.
