Preheat oven to 450 degrees F. Make an “X” on the flat side of each chestnut with a sharp knife. Place the chestnuts on a baking sheet, and roast 25 minutes. Remove, and let cool. Reduce the oven temperature to 400 degrees F. Crack the chestnuts open with a nutcracker. Remove chestnut meat. Chop the chestnuts coarsely, and put them in a large bowl. Heat 3 tbsp. olive oil in a skillet, and fry the bread crumbs until light brown. Put the bread crumbs in the bowl with the chestnuts. Add 1 tbsp. olive oil to the skillet, and sauté the prosciutto until crisped. Add prosciutto to the bread crumbs. Add the parsley, garlic, Parmesan cheese, 1 1/2 tbsp. rosemary and 1 tbsp. olive oil to the bread crumb mixture, and set aside.
