The Italian Tri Colore Cookie has been given many names. Whether you call them Rainbow Cookies or Christmas Cookies, the name is always secondary to the taste. These sweet, cake-like, almond flavored cookies have been my favorite since I was a little girl. The main components required when making these cookies are patience and time.
