How Do You Make Italian Chicken Pinwheels?
This is a colorful mix of chicken and cheese that will capture the child’s imagination and keep their attention all supper long. I have experimented with food coloring and made a green eggs and ham variation or bright pastels during Easter time of this recipe. Keep dinner time fun and enjoy. Place chicken between 2 sheets of heavy-duty plastic wrap; flatten using a meat mallet or rolling pin. Season with salt and pepper. Combine red pepper, cream cheese, and pesto in a small mixing bowl, stirring until smooth. Spread cheese mixture evenly over chicken breasts. Roll up like a jelly roll and secure with wooden picks. Combine crushed cereal, parsley, and paprika. Cover chicken in cereal mixture. Place in a baking dish coated with cooking spray. Bake, uncovered, at 350 degrees for 35 minutes and allow it to cool for 10 minutes. Remove toothpicks from chicken, and slice each roll into 6 rounds. Garnish with springs.
