Making these chicken bites is easy and quick so you can get your kids fed in a timely manner with a sure to please dish. Here is how you make Italian chicken bites: Fill a frying pan with about an inch of oil of your choice. Set heat to high. Most people use vegetable oil, but Extra virgin olive oil is healthier. Cube the thawed boneless chicken breasts. Completely coat each piece of chicken with Italian dressing, then coat with bread crumbs. Make sure the bread crumbs completely cover the chicken to lock in the dressing and the flavor. If needed, you can dip the chicken bite back in to the Italian dressing and again in to the bread crumbs, giving your chicken two coats. Place the chicken pieces in the hot oil. Cook on all sides until the chicken is golden brown. Drain on a paper towel. Serve hot.
