How Do You Make Irish Brown Bread?
• In a bowl, mix the all-purpose flour, sugar, baking powder, baking soda and salt. With a pastry blender or 2 knives, cut in the butter until this mixture forms fine crumbs. Stir in whole-wheat flour and oats. • Add in the yogurt and stir gently. If the mixture is too dry to hold together, stir in some milk, one teaspoon at a time, just until the dough holds together. It should not be sticky. • Turn the dough onto a lightly-floured board and knead gently 5 times to make a ball. • Set onto a lightly-greased baking sheet. • Pat it into a 7-inch circle. • With a floured knife, cut a large X on the top. Bake in a 375-degree oven until well-browned, or about 40 minutes. Cool to your liking on a rack. Serve warm or cold, with or without butter.
