Indian Summer Rice Salad is a nice dish for summertime. It works well at a potluck or picnic, and tastes delicious! Remember…old fashioned recipes are always the best! Cover and let stand for 20 minutes. Step Two: Vegetables and Fruit Chop, blanch, and otherwise prepare the vegetables. Step Three: Assemble the Dressing Wisk the oil and sweetener first. The honey will help the raspberry mash stay in suspension. Wisk in the raspberry mash. Wisk in the greens, herbs, and salt. The dressing gets more complex as it stands, so you can make it the day before. Step Four: Putting it Together and Serving. Toss the dressing and rice-vegetable-fruit mixture together.
