How Do You Make Incredible Argentinian Empanadas?
This is a recipe that has been passed down from my Grandmother who is still making empanadas at the age of 80. They are crisp and delicious! You will love them! In a large skillet, heat 3 tablespoon of olive oil. Add the sweet onions and sauté until they are carmelized but not burnt. Add the chopped meat and sauté on high flame until slightly browned. Add raisins and spices and cook until meat is cooked through. Remove from heat and add diced olives and hardboiled eggs. Let mixture cool in the refrigerator for aproximately Hours. Fill empanada discs with meat and seal the dough using water around the edges and a fork to press the edges together. Preheat oil in a deep sauce pot fitted with a frying thermometer to 375 degrees. Deep fry the empanadas in the oil for about 3 minutes. Remove from oil with slotted spoon. Drain on paper towels. Enjoy warm!
