We all know about the benefits of herbs, and many people who grow herbs have more than they can use in cooking. But did you know that you can make healthy herbal iced teas to drink? Almost any kind of edible herb is suitable for this, and makes delicious herbal iced tea. Clean out your tea maker, if necessary. Add the water from the pitcher to the tea maker. Fill the pitcher with ice. Rinse two large handfuls of fresh herbs, or measure about two spoons full of dried herbs. You can use any herb that is safe to eat. If you are using rose hips, crack them open with the bottom of a heavy glass. If using dried herbs, add a filter to your iced tea brewing basket. If using fresh herbs, add herbs to the basket, then bruise lightly with the back of a spoon. Run your iced tea maker as normal. Taste the tea. If it is too strong, dilute with cold water.
