Professors and teachers in science museums and science classes sometimes do demonstrations with liquid nitrogen as a way of exhibiting different states of matter. One of these demonstrations that an experienced educator might do is make ice cream with liquid nitrogen. Liquid nitrogen is very dangerous and because of this can only be obtained by persons showing knowledge of its properties and safety precautions for its use. Liquid nitrogen is stored at -196 degrees Celsius. It will freeze anything on contact, including human tissue. While this is interesting to watch, it should never be performed by someone not qualified to handle liquid nitrogen. Pour the cream, half and half, sugar, and vanilla in a large metal bowl. Stir the ingredients until the sugar is dissolved. Carefully pour a tiny amount of liquid nitrogen into the bowl from the flask. Stir the mixture until the ice cream freezes, usually in a matter of minutes.
