Orzo is a rice-shaped pasta that is enjoyed by many European countries. This method of preparing orzo was given to me by my Hungarian grandmother. You can buy orzo in the pasta section at your local supermarket. Melt about 5 tablespoons of shortening in a pan, using high heat. Stir in the box of orzo. This recipe will make a full box, but it can easily be cut in half to accommodate half a box. Stir orzo constantly with a wooden spoon until it is brown, but not burnt. You may need to turn the heat down to medium-high to prevent it from burning. Simultaneously, boil water (I like to do so in a tea kettle for easy pouring) Add twice as much water as their is orzo into the pan. It doesn’t have to be exact, just eyeball it. Stir for one minute then put a tight-fitting lid on top, reduce heat to low and let simmer until the orzo is tender and the water is evaporated. If the orzo is not tender when the water is gone, you can add a bit more.
