This is a very quick and delicious tomato sauce that can be made in 25 minutes or less depending on the quantities of fresh tomatoes. It is light and subtle but makes a pasta dish extraordinary with a touch of grated romano cheese and pure virgin olive oil. Gather fresh 12-16 medium size ripe tomatoes. Cut tomatoes in half or quarters. Put aside in a medium size bowl Take a large fry pan and coat the bottom with virgin olive oil and 3 cloves of chopped garlic. Let the garlic and olive oil cook slowly until you get a nice aroma . Take the fry pan off the burner for a minute or 2 and add the tomatoes slowly and let simmer until they soften. Add some fresh basil leaves and salt to taste, stir frequently, when the tomatoes have softened, let cook on low to medium heat for 15 minutes. Taste it and add more salt or garlic as desired. Stir frequently and when the sauce thickens then it’s ready!
