How Do You Make Homemade Pierogi?
Pierogi, also known as potato dumplings, are easy to make. This recipe makes about one dozen dumplings. Pierogi do take a bit of time to make, but they are worth the effort! DOUGH: 1 cup flour 1 egg 4 Tablespoons water Mix flour and egg with enough water to make a soft dough. Knead well. Roll out to 1/8″ thickness on a lightly floured surface. Using a biscuit cutter, round cookie cutter, or drinking glass cut the dough into circles. FILLING: 1 large potato, cooked and mashed 1 Tablespoon butter or margarine 1/2 cup shredded cheddar cheese Place 1 Tablespoon of filling onto each circle. Fold in half and pinch edges together to keep filling inside. If the dough does not stick together when pressed, moisten with a drop or two of water. Drop sealed dumplings into salted boiling water. Cook until they rise to the surface. Drain. Place pierogi into a baking dish sprayed with nonstick cooking spray. Slice one medium onion. Place onion and 1 stick of butter into a saucepan.
