Combine, in a large bowl, one cup of flour, two eggs plus one egg yolk minus the white, one tablespoon olive oil, 1/3 cup of water, and one teaspoon of salt. Beat by hand, or with a mixer, for two minutes. At this point, the dough will be sticky. Stir in enough additional flour to create a soft dough. Stir the additional flour in a spoon full at a time, so you don’t add too much. Put the dough onto a floured surface, and knead for about ten minutes. The dough will be ready when it is elastic and smooth. Cover the dough with a cloth, and let it rest for 30 minutes Cut the ball of dough in half. Take one half, and roll it out on a floured surface, until you form a large square or rectangle that’s about an eighth of an inch thick.
