I spent a semester in Florence, and my Italian professor took our class to her home and taught us how to make homemade pasta from scratch, literally from just eggs and flour. Here’s how! If you are lucky enough to have a stand mixer or a bread machine, add the flour and the eggs and, using the dough setting, and let the machine do its thing until you have a perfectly combined ball of dough. If not, cover a large working surface with extra flour, place the flour in the middle in a tall pile with the center removed like a volcano. Crack the eggs into the volcano where the “lava” would be. With your hands, start at the edges and knead the eggs and flour together. It will be slow going, but your goal is to create a solid, well combines ball of dough.
