Freshly made marinara sauce is one of the world’s most irresistible recipes. Here’s how to make your own. Peel the garlic. Warm the olive oil in the saucepan and when it is warm add the garlic. Keep the garlic there and when it softens and turns brownish, add the tomatoes in step 2. Open the can of tomatoes. You can use local tomatoes but the final result will not be as delicious as if you use imported Italian tomatoes. Using a mortar or a large fork, crush the tomatoes with their juices. Add the entire contents to the saucepan. Finely chop the fresh basil and add it to the saucepan. Add a small amount of oregano if desired. Dried oregano is fine. Add salt and pepper to taste. Turn up the heat until the sauce begins to boil and then turn it down. Let the mixture simmer until much of the water evaporates, leaving you with a sauce.
