Homemade Limoncello is very easy to make and is better than commercially available products. It is great for entertaining and if you bottle it can make fantastic gifts! Wash everything including glass jug and lemons, it is very important to make sure everything is clean. Also if you are not using organic lemons make sure to remove all the wax off of them. Dump vodka into your glass jug, then start peeling the outer skin of lemons off with the vegetable peeler. Make sure to only peel the yellow skin, the white pith will make the limoncello bitter, if you need too you can scrape off any white with a sharp knife. Put peels immediately into jug with vodka. Seal your jug and let sit for 2 to 3 months in a cool dark place (the longer the better). I put mine in the back of a closet, the vodka needs time to release the essential oils out of the lemon skins. Mix water and sugar together in a heavy saucepan, and cook over medium heat until all the sugar dissolves. This is called a simple syrup.
