How Do You Make Homemade Ice-Cream Sandwiches?
These Homemade Ice-Cream Sandwiches are the perfect treat for any occasion. Combine butter, sugar, brown sugar and egg yolk in a medium bowl. Add flour, baking powder, salt and green food coloring. Mix well. Cover and refrigerate about 4 hours or until firm. Roll dough on floured surface to 1/4 inch thickness. Cut out cookies with cookie cutter. Place on ungreased cookie sheets. Bake 8 to 10 minutes or until cookies are lightly brown around the edges. Remove cookies and place on wire racks to cool. Cool completely. Remove ice-cream from freezer and let stand at room temperature to soften slightly, about 10 minutes. Spread 4 to 5 tablespoons ice-cream onto flat side of half of the cookies. Place the remaining cookies, flat side down on ice-cream. Press cookies together lightly. Wrap each sandwich in foil. Freeze until firm, about 2 hours or overnight. Variations: 1.
