This is one of my favorite recipes to make. I learned it from my mom and then built it to be a more colorful dish. Begin by trimming the fat from your boneless skinless chicken breasts. Cut the chicken breasts into bite size pieces and then sauté them in a pan that has a coating of cooking spray. Begin boiling 3 cups of rice. Include a cube of chicken bullion in your rice water to add flavor. Once your chicken bites have browned add your stir fry vegetables and reduce your stove top heat to medium low. Stir the chicken and vegetables often to prevent them from burning or hardening. Test your vegetables with a fork for tenderness. As your vegetables come close to the desired tenderness, pour your chicken gravy into a 2 cup microwavable bowl. Add one teaspoon of soy sauce to the chicken gravy and stir.
