How Do You Make Hearty Potato Soup?
There is nothing like a warm bowl of hearty potato soup on these chilly evenings. Filled with chunks of potatoes, celery and bacon, this soup will comfort you to your toes. Wash and dice potatoes, do not peel. Place them in a large pot with one quart water and 2 tbls. Sea Salt. Turn burner to medium. Wash and dice celery, including the leaves. Add to pot with potatoes. Stir frequently while potatoes and celery cook. Bring to slow boil over medium heat. Dice the center cut bacon, fry it until crisp. Drain off the fat and put the bacon aside until the potatoes and celery are almost done. Add the fried bacon to the pot, stirring carefully so as not to ‘mash’ the cooked potatoes too much. Stir in the milk and add the butter. Stir until butter is melted and soup is slowly boiling again. Mix the flour with about a cup of water, stirring with a fork so there are no lumps. Slowly stir into soup and continue stirring gently while broth thickens Taste and add Sea Salt if needed.
