How Do You Make Hearty Potato Cheese Soup?
On a cold winter night, soup is a warm and comforting meal. With a loaf of bread, a cube of butter, and a green salad, you can feed the whole family. One of my favorite soups is Hearty Potato Cheese Soup, made with real potatoes, carrots and shredded cheese. Scrub the potatoes. Cut out any bad spots but don’t peel. Chop into 1/2 inch cubes. Put into soup pot. Scrub carrots. Slice into thin rounds and add to pot. Peel and wash the onion. Chop into very small pieces. Add to the pot. (You can use minced, powdered, or dried onions if you prefer.) Open the Cream of Chicken soup and add to the pot. Fill can twice with water and add to pot. Add the garlic powder and pepper. Don’t add salt, the soup has enough salt in it! Bring the soup pot to a boil, then turn it down and simmer for at least 30 minutes, until the potatoes and carrots are tender. Stir occasionally so it doesn’t stick. About 10 minutes before serving, add shredded cheese to the pot and stir constantly while the cheese melts. Se
