Sloppy Joes are a great part of any delicious dinner rotation but are not always the healthiest choice. There are several ways you can make a sloppy joe a delicious healthy all-in-one meal at dinnertime! BROWN THE MEAT Place your ground turkey in a saucepan with no oil or butter. You only need about 1/2 the called for meat because you will be replacing the other half with beans. Brown the meat and drain any excess fat. PREP AND ADD ZUCCHINI Wash your zucchini and trim the ends. Grate the zucchini on a cheese grater directly into the saute pan. Let the zucchini saute with the turkey for a few minutes to soften it. ADD BEANS Add 1/2 to 1 cup of beans depending on your tastes. You can use any type of bean – black beans, refried beans, etc. Simmer beans, meat, zucchini for 2-3 minutes. ADD AND SIMMER Add the sloppy joe mix, tomato paste and follow required directions listed on the mix. Simmer for several minutes longer.
