How Do You Make Healthy Italian Minestrone Soup?
There’s nothing like homemade soup to soothe the soul and make your home feel, well, homey! This is my Italian minestrone soup recipe and my family’s favorite. Low fat, nutritious and HEARTY! It makes A LOT, so you’ll have enough to feed a big family, or enough to freeze for later. Pour your 1/2 pound of dried beans on to a jelly roll pan and pick out stones and bad beans It is important to use small soup beans that come in a mix so that all the beans will cook relatively quickly and without presoaking. Place picked over beans into your large pot with water, oil, garlic, onion, carrot, celery. Turn burner heat to medium Puree your canned tomatoes till smooth. Add to pot of beans along with wine (use wine to swish around blender jar to wash out last bit of tomato puree,) and spices except salt and pepper. Bring mixture to a boil, and then reduce heat to simmer. Cover pot and continue simmering, stirring occasionally for two hours. Add more water if the minestrone soup seems too thick. W
