Another easy muffin to make using this delicious fruit. Heat oven to 350 degrees. Butter muffin pans. This recipe makes twelve muffins. In a small bowl, mix apricots and lemon juice. Set aside. In another bowl, mix together the flour, baking powder, salt and nutmeg. Set aside. In a large bowl, cream together the butter and sugar. Add egg and beat mixture well. Stir in the apricots and the walnuts. To the butter mixture, add alternately, the flour mixture and the milk. Stir only enough to combine. Spoon batter into prepared pans and bake for approximately 20 minutes. Cool on racks. Enjoy!
