For the stock: Place all of the ingredients in a large pot, simmer for 2 hours, strain. Remove ham from the bone and set the met aside. You can make the stock a day ahead. FOR THE LENTIL SOUP: Add your lentils to the ham stock and cook over medium heat 35-40 minutes. Add in the diced carrots and cook about 30 minutes. You can use red or yellow lentils for a nice color. Place the cubed potatoes and the ham into the soup and continue simmering until the carrots and potatoes are cooked and lentils have pretty much dissolved and thickened the soup, about 1 hour.
