How Do You Make Grilled Chicken And Artichoke Summer Salad?
I love this salad. I was never really into using artichokes because they are so difficult to clean and I was always a little wary of the canned ones. I won a gift basket at a party and in it was canned artichokes, what was I to do? Well I put it together with some of the flavors I really like and this is what became of it. Now I am never without artichokes in house. This is a great summer salad that can be served as a side or as a main dish. The salad can also be prepared ahead of time to take to a party or event and then dressed just before serving. Get over the artichoke fear and give it a try. On a clean plastic cutting board butterfly the boneless skinless chicken breast. To butterfly hold the chicken on the thinner side of the breast and slice into the round part of the breast. Slice almost all the way through so it will open up and lay flat like butterfly wings. Preheat your grill to medium high heat. Brush the grill with a little olive oil to prevent the chicken from sticking. C
