How Do You Make Green Pepper Jelly?
The flavor of this jelly is wonderful. It’s great with toast or on crackers served with a little of cream cheese. This jelly makes a wonderful sophisticated gift and is also a great accompaniment for pork and a great topping for hamburgers! Clean and seed sliced peppers. Put into a blender or food processor with 1/2 cup vinegar. Whirl until well chopped and blended. Put into saucepan and add sugar, the rest of the vinegar, and the red cayenne sauce. Bring to a rolling boil and boil gently for 5 minutes. Remove from burner and cool for 5 minutes. Add a few drops of green food coloring. Cool for an additional 2 minutes and add pectin. Stir Well. Pour into small sterile (8oz) Jelly jars and seal with parafin or water bath. Refrigerate.
