How Do You Make Great Northern Bean Soup?
A good, hearty bean soup that goes great with cold weather and bread. • Dice onion. • Saute in olive oil. • Add ham shank. • Add Great Northern beans that have been soaked over night. • Add chicken broth, one teaspoon each garlic and oregano. • Add freshly ground black pepper to taste. • Bring to boil, cover, turn to low and let simmer for two hours, or until beans are soft and shanks are falling off the bone. • Remove ham shanks and bones. Dice or pull meat apart, adding it back to soup. Serve with dinner rolls or crusty bread.
