How Do You Make Grandmas Persimmon Cookies?

0

My grandmother used to have several Hachiya persimmon trees in her yard along with many other fruit trees. Hachiya persimmons are beautiful orange colored soft fruits when fully ripe. Hachiya persimmons can be used to make delicious persimmon cookies that are soft and moist. My grandmother has since passed on, but her recipe for baking persimmon cookies has been a tradition in our family that is now being passed on to her fourth generation. Preheat oven to 350 degrees. Lightly grease a baking sheet. Put persimmon pulp in a small bowl. Stir baking soda into persimmon pulp and set aside. Sift together flour, cinnamon, cloves and nutmeg into a large bowl. Cream together sugar and shortening in a medium size bowl; add egg and persimmon pulp and mix well. Add creamed mixture to flour mixture. Stir in raisins and chopped nuts. Drop dough by teaspoonfuls onto greased baking sheet and bake 12-15 minutes.
