There’s nothing more delicious and comforting then a home cooked meal the way that grandma used to make it, except when that meal is as easy as turning on the oven. If you thought grandma used to slave away in the kitchen all day, you might be right; but here’s one recipe that didn’t cost her a whole days work. Heat oven to 400 degrees F. Wash and dry chicken and remove excess fat and skin. Grease the top and sides of a baking pan. Combine flour and salt and spread on a dinner plate. Roll chicken pieces in the flour mixture and place into oiled pan. Drizzle the 3 tbsp. of oil over the chicken and bake for 55 minutes or until cooked through and golden brown. Remove chicken from oven and reserve 5 tbsp. of the pan drippings. Heat drippings and 3 tbsp. of flour and salt (leftovers from chicken coating) in a heavy sauce pot, stirring constantly until light brown. Add 1 cup of chicken broth and stir until thick. Add salt and pepper to taste.
